DOUGH
• 750 g Pastry flour
• 75 g Almond powder
• 42 g Baking powder
• 12 g Baking soda
• 9 g Salt
• 6 g Cardamom powder
1. Premix the 5 last ingredients.
2. Mix all the dry ingredients except the cake protein mix in a stand
mixer.
3. Blend the cake proteins, mix with the water and soy milk, then
add the orange juice and the meltedplant-butter, then emulsify.
4. Add the lemon zest.
5. Add the previous mix into the stand mixer into the dry ingredients.
6. Followed by the fruits premix.
7. Reserve the dough.
