Glazed eggplant, miso, ume, chickweed
2 persons Ingredients:
2 eggplants
miso glaze:
Sake 35g
Mirin 35g
sugar 40g
brown rice miso 125g
vegan butter 50 g
1 tbsp Ume sesame seeds
A few sprigs of chickweed
Preparation:
Place the sugar, mirin, and sake in a saucepan over the heat, bring to a boil and add the miso. Whisk under the vegan butter. Cut the aubergines in 2 and cut the flesh. Bake the aubergines in the oven for 50 minutes at 180 degrees, take them out when they are soft inside. Brush the aubergines nicely with miso and finish with ume sesame seeds and fresh chickweed sprigs.
